  • Aloha everyone! It’s been a while, but with Mother’s Day coming up, we thought we should get some “Tail” sent out to you — here’s a slightly edited version of what the food-service industry gets …
  • First & foremost — We are now back to ‘normal’ with shipments of NZ’s ‘BIG GLORY BAY’ KING SALMON, their Covid issue is now a thing of the past, have at ’em! Timing is right to switch to ‘BGB’, because NZ ‘ORA-KING’ SALMON is experiencing multiple problems, and their fish is (and will continue to be) on strict allocation.
  • The First Opening for the 2022 season for LOCAL CA WILD KING SALMON is happening Now! — coming from San Mateo coast & Monterey Bay, we expect to have fish avail to you by Friday, in time for Mom!  Two more 5-day openings later in May, a two-week opening in early June, (all from down south), then the SF to Ft. Bragg & north will start up in mid-July.
  • Speaking of Ft. Bragg, some UNI Trays (100-gms) coming in tomorrow!
  • And as always, Canadian ATL SAL, ‘LOCH DUART’ SAL, & ‘LOCH ETIVE’ STEELHEAD/OCEAN TROUT are all avail, too.
  • Due in before Mom’s Day — FRESH COOKED OREGON SHRIMPMEAT! First of 2022.

* Hey home-chefs, Happy New Year, we’re real grateful for all the extra business that you send our way. Now, being that NYE is one of the three busiest restaurant nites of the year, it’s interesting to see that so many of y’all already have your orders in for tomorrow (a few for Friday), which means you’re cooking at home. And it means that I don’t really need to send out this “Fish Tails”, so I’m gonna keep it real short — The First of This Season’s LOCAL CRABS are arriving to dock as I write this, both LIVE & Fresh-COOKED will be avail tomorrow. The price on the attached Price-List isn’t even updated yet, (because we really aren’t sure), but expected to be cheaper than what’s listed. Oh yeah, U/10 HOKKAIDO SCALLOPS are back, after not being avail for the past few months. Other than the attached Price-List, read on for some previous re-“Tail”. I’ll be in touch again next year.

  • Who needs some more “Tail”? It’s time for another one … Here’s da’ scoop:  AHI POKE CUBES are expected to be available by Thursday!   Word is that the season for LOCAL DUNGENESS CRABS may open up this Sunday, if the weather cooperates, then we’ll have ’em before X-Mas. And if so, we’re hoping to see stabilized pricing btwn these and the Northern CRABS, (which we’ve had available). Reminder that the price for DUNGENESS CRABMEAT has dropped a bit already.  “LOCH DUART” Premium Scottish SALMON is open again for harvesting.  Weather problems (and the fact that boats are geared up for Crabs) have us scrambling for Petrale Sole, Black Cod, & Rock Cod this week — good chance that we’ll be offering suitable “subs”.  Alaskan/Northern Halibut is all done until March/April of 2022; we have some Mex’n/SoCAL HAL for now.  We still have U/10 FROZEN SCALLOPS and both FRESH HOKKAIDO U/15s & 10/20 DRY-PACK SCALLOPS.  And it’s always necessary for Pt Reyes Oyster harvesting to come to a halt after a nice rain, due to the runoff of what the dairy cows leave behind on the hillsides.

  • Yer gonna like this news — The Northern DUNGENESS Crab Season (Eureka/Crescent City, Oregon) is gonna open tonight at 12:01am, we hope to have Crabs available for you by Friday!! Prices aren’t firmed up yet, figuring on $11-ish for Live, $12-ish for Fresh-Cooked.  Also, “Loch Duart” Salmon will harvest this week, we’ll have ’em by next Tuesday.  “Marativa” Shrimp/Prawns (the ‘Del Pacifico’ replacement) could be avail by Friday, choices for now will be Headless Shell-On 16/20s, U/15s, & U/12s.  Got some more UNI ordered (and expected in) for Friday!  And since we’re on the subject of eggs, PLEASE get yer requests for yer holiday CAVIAR needs in to us as soon as you can.
  • Gettin’ real low on AHI POKE CUBES for this week.  AK Halibut season is winding down, and they’re not out fishing — check back in March or April, 2022 — good supply of SoCAL/BAJA HAL.  Still No ETA on when we might see the Gidney Splits (Lobsters) again, (hopefully next week), and NO ETA on U/10 Dry-Pack Scallops, either. Plenty of 10/20s & U/15s, and FZN IQF U/10s.

  • Hiya’ again — getting a lotta’ inquiries about Crabs for Thanksgiving, here’s the story: The Local commercial season for Dungeness Crabs has not opened, and it won’t open for the time being. The excuse is that there are too many endangered whales out there, and they don’t want to take the risk of one getting ensnared in the crab gear. (My take is that “too many” and “endangered” don’t belong in the same sentence.) At this point, we are expecting the Northern season (Eureka, Crescent City, Oregon) to open in early December, the Crabs up there just need to fill out their meat ratio another percentage point or so. There are some sporadic shipments of Crabs being trucked down from WA & Canada, which you may see in the marketplace, but they are extremely extremely expensive.
  • You guys also show a lotta’ intertest in UNI, and we’ll have some of the 100-gm trays available this week, starting tomorrow!!
  • And finally another limited shipment of AHI POKE CUBES is also due in tomorrow, hopefully.

Fish Tails 11/3/21: November “Tail” from Aloha

FISH TAILS 

  • Aloha Home Delivery Customers — still too lazy to get a separate “Tail” out to you guys, so here’s a recent version of the “Tail” that’s sent out to restaurants & food-service. Except I forgot to mention Crabs — You should plan on yet another Thanksgiving WITHOUT any Local Dungeness Crabs, as we have little hope that the season will open before then. Too much bait out there, which too many endangered whales like to dine on, which creates a higher probability that one or more of these too many endangered whales will get tangled up in Crab gear. If you’re not a tree hugger, then you too are probably confused by “too many” and “endangered” in the same sentence.
  • Here we go … Mostly things you’re already aware of … “Loch Duart” Salmon is out of production for at least another month, we’re filling in with another Premium SCOTTISH SALMON. More on Salmon: “BIG GLORY BAY” NZ KING SALMON are available again after a week off.  The Littleneck Clam area shut down again (red tide), so we’re bringing in extra MANILA CLAMs.  Pt.Reyes Oyster Co. also remans closed (dairy farm runoff into Tomales Bay), but plenty of WA varieties are available.  Halibut this week will be ALASKAN HAL only, and not until Friday.  Wow, y’all blew thru those Ahi Poke Cubes pretty quicky, None more ’til the end of da’ month.
  • Seeing better availability this week on ROCK & TRUE & BLACK COD; PETRALE SOLE; Bass = CORVINA, PINK GROUPER/BAQUETTA, BAJA STRIPED BASS, & BARRAMUNDI.

  • We’re getting close — hopefully by sometime next week we will have in the new production of WILD PACIFIC BLUE PRAWNS, a few different sizes & specs, and now under the “MARATIVA” label, (rather than “Del Pacifico”).  Current inventory on “Del Pacs” is Only 21/25 P&Ds T/ON, too many in da’ house, let’s wheel & deal!!!  And read on for some re-“Tail” …
  • Holiday banquet idea — the GIDNEY LOBSTER SPLITS are a North American (Canada, Maine) Lobster Chix, split in half, blanched, then Tail & Claw & Knuckle Meat removed, which is then stuffed back into the half-shell. About 5-oz net, then IVP (individually vacuum-packed). $33 per lb, so $10/12 per each, which works out to be less than LIVE LOBSTERS, LOB TAILS, or LOBSTER-MEAT.
  • Back in da’ house again!! — Fzn ROCK/JONAH CRABMEAT, the 2#ers … KAMPACHI FIL AND HAMACHI FIL … And BABY OCTOPUS.
  • More  re-“Tail”:  The embargo that prevented Mexico from exporting Prawns/Shrimp into the U.S. has been lifted!, so we’ll expect a bunch of the Premium Pacific Wild BLUE MEX’N PRAWNS to get here as soon as logistics allow, stay tuned for more. For now, we have a lotta’ 21/25 P&Ds, that’s it.  Limited supply of AHI SAKU BLOCKS have landed in our freezer, with Skinless/BLO AHI LOINS already taking up space in there.  We now have “Paradise” brand of Asian 5/8 T&T!! (slightly cheaper than our 5/8 Domestic “Sea Legend” brand).  Keep in mind that our current batch of “COASTAL HARBOR” SMOKED SALMON are about half the size that the sides usually are, only about 2# ea.  We’ve run OUT of U/10 Hd/ON TX Prwns, with no replacement lined up yet.

  • Fresh AHI 2+ and #1 have also been tight, and pricey too. Good inventory on AHI SAKU BLOCKS & AHI POKE CUBES. Some TOMBO coming in this week, MAHI, SWORDFISH, FZN KAMPACHI FIL all available.
