  • And another thing — Why is the opening of the commercial Dungeness Crab season delayed until December, but the sportsmen fishery (charter boats/recreational) is allowed to fish?? They use the same gear, and as intelligent as whales are, I’m pretty sure that they wouldn’t know the difference whether they got tangled up in recreational lines or in the commercial fleet’s lines.   • Gettin’ real close to the end of ALASKAN HALIBUT season — we hopefully have a shipment arriving on Friday, and that may be the end. Look to SoCAL/MEX’N HAL to fill that void for the next several months. NO Uni expected in for this week, and this one too will be real hit-or-miss (mostly miss) for the next several months.
  • What you and your discriminatory culinary palates may notice is that the overall quality of seafood actually takes an uptick for the next several months. This is due to spawning cycles being over, so shellfish and (wild) fish are now beginning to fatten up for next year’s sexual adventures. CLAM Chowder, CLAM-Bakes, and Cioppino are all great comfort-food dishes for the cold months, and all feature SHELLFISH. Or look to Bass — this week we have MEX’N PINK GROUPER/BAQUETTA, MEX’N Frm’d STRIPED BASS, BARRAMUNDI, & BRONZINI, with some CORVINA coming later this week. Local Cods are ROCK & TRUE & BLACK COD. Some LING COD too, which is another one that’ll get real tight moving forward. Got some HUACHINANGO (real Red Snapper from Baja) for the first time in a while. PETRALE SOLE / YELLOWTAIL JACK / SWORDFISH / AHI & TOMBO / More …

  • Check out the “Hot Specials” section of the Price-List, and notice the 16/20 P&D Blue PRAWNS from “Del Pacifico” on the Sea of Cortez — these are Wild, and a rarity in the Shrimp industry, they are caught in one-day outings, with Suripera nets, frozen one time only, and the company has exclusive and hard-to-attain Fair Trade Certification! (We ordered 16/20 Headless Shell-On to replenish our stock, they sent us P&Ds by mistake, discounted the cost, and we’re passing it on to you!) Yes, they aren’t cheap, because of the factors listed above, but “Del Pacifico” are absolutely da’ Best Prawn/Shrimp that can be found.   • Bonus issue this week because there’s a lotta’ inquiries about new developments around the Crab season — here’s what we know: The CA Dept of Fish & Wildlife has officially delayed the start of the upcoming Dungeness Crab season until at least December 1st. The reason is that there are too many endangered whales lingering in crab-fishing areas, which increases the chances of one or more of them getting tangled up in the crab gear. This means that there will Not be Crabs for Thanksgiving yet again. So the fight is on — the Fishermen’s Association’s stance is that CDFW should back off on this decision for a few days because tomorrow’s storm system might get the whales to believe that Autumn is actually here, so they’ll start scootin’ on down to Mexico … also, the fleet just endured the destructive Pier 45 Fire and a so-so Salmon season, so any more bad news isn’t warmly welcomed … and why are they still considered an endangered (and protected) marine mammal if there’s so darn many of ’em? … (in other words, one unfortunate whale could feed a lotta’ hungry & homeless folks). If there’s anything different to report in the days ahead, you’ll be the first to know, but we’re afraid that the outlook is bleak. That’s it — below is most of the previous “Tail” …

  • Moving up my list of faves is Mex’n Farm’d STRIPED BASS — this weekend I ate some crudo/sashimi style, also simply grilled with some sea-salt, as well as baked with a tomato-y/Mex’n salsa — awesome fish, firm, white flakes, doesn’t get dried out, and although kinda’ bony, the bones are big enough to not be a nuisance at all. We also have some large (5/7s) TAI SNAPPER that fit all those descriptions too. I’m thinking that I’ll write in that duo on my ballot when I go to vote later today.

  • No updates to report on the (hopefully) upcoming CRAB season; here’s what we wrote last week — Unlike recent years, the expectation this year is that we will have a ‘normal’ Dungeness Crab season, which means Crabs for Thanksgiving, but we cannot quote prices to you yet, because labor negotiations between the fishermen and the processors haven’t even started yet. So, if all goes well (no domoic acid counts, nice weather, whale protection in place, and price settlement in place), then we could see Crabs by mid-November at the latest! Stay tuned!

  • Scallop news — “Bristol” is now supplying U/10-sized SCALLOPS from Hokkaido (Japan), after more than 2-years without any, which we like even better than domestic Scallops … if you’re familiar with our 10/20s & U/15s, these’ll be the ‘same’.
  • The season is winding down on AK HALIBUT, and regular availability is winding down on LOCAL HAL, so the price is up a bit on both of those. SoCAL HAL is starting to appear, and the price will drop, but it hasn’t yet.

  • A question that comes up often is “Is our fish Sashimi-grade?” The short answer is “Yes”. Seafood thawed from a Frozen state are great choices because the freezing process kills off any parasites and inhibits bacteria growth. There is actually a (never enforced) law or regulation that says “any fish consumed raw must have been frozen at some point in the process”. Also, Fresh seafood, if real fresh, is also a great choice — Many restaurants offer crudo, tartare, poke, raw-bars, etc., much of the offerings of which have never been frozen. (remember that never-enforced law?) Parasites are not an issue with Fresh farmed fish. Parasites that are detected in wild fish may be unappetizing to most (and may be part of the whole sushi experience to others (insert wink emoji)), and if the parasites that we commonly encounter are not detected, but rather ingested, know that they are not a health hazard. You didn’t go to the hospital when you found half-a-worm in your … apple, right? Bacteria growth is constant and inevitable, and eventually causing deterioration of the meat, especially surrounding the belly cavity. This is not fresh enough fish. Trust your nose.  Then it just comes down to personal taste — for me personally, I do not like raw, previously frozen Shrimp. Eeeew. I can’t imagine eating raw, farmed fresh Catfish, even though I love it fried, and Catfish has a very good shelf-life. And raw wild Swordfish wouldn’t ever be a high sashimi priority for me.
  • Back in da’ Freezer after a lengthy hiatus are Fries with Eyes, a.k.a IQF LAKE SMELT … rich, tasty little things; snap off the head (or not), dust ’em in flour, deep fry ’em like french fries, eat the bones, fins, head, all of it. Fingers & napkins are the only utensils required.
  • We carry a few brands of SMOKED SALMON, all are ‘nova style’ (Lox), all are sliced (cater-cut), all are about 3 to 4# per side. Easy to break down into smaller units for yer freezer, then thaw ’em when you need ’em.

  • Scallop news — “Bristol” is now supplying U/10-sized SCALLOPS from Hokkaido (Japan), after more than 2-years without any, which we like even better than domestic Scallops … if you’re familiar with our 10/20s & U/15s, these’ll be the ‘same’. Also note a very slight uptick in Scallop pricing on our Price-List.
  • The season is winding down on AK HALIBUT, and regular availability is winding down on LOCAL HAL, so the price is up a bit on both of those, as well. SoCAL HAL is starting to appear, and the price will drop, but it hasn’t yet.
  • I’m glad I took home some Local Wild King Salmon on Saturday — No more, that’s it until May-ish, 2021. So here’s da’ Salmon story for the next many months — All Farmed, and all with some levels up to crazy-high levels of environmental & sustainability certifications & recognitions — ATLANTIC SALMON x2: Canadian, our least expensive/most popular, & “Loch Duart”, from Scotland/the ‘model’/famous … KING SALMON x2: “Ora-King”, from New Zealand, & “Big Glory Bay”, also NZ (way way southern Stewart Island)/tastes lean & clean … STEELHEAD/OCEAN TROUT x2: Washington (Colombia Riv), 3/5 lbs ea, & “Loch Etive”, from Scotland/fatty & flavorful.

Yes, they aren’t cheap, because of the factors listed above, but “Del Pacifico” are absolutely da’ Best Prawn/Shrimp that can be found. Currently, Disney Corp is their top customer … let’s see if we can join that Mickey-Mouse outfit at the top of the list!

We’re offering six of ’em — Blackened-&-Smoked Butter SCALLOPS or ATLANTIC COD or WILD SOCKEYE SALMON, and Sesame-&-Seaweed Teriyaki on the same three fish. Seems perfect for all of you HDS customers. Give ’em a try!

We’re partnering with C & L Produce, a highly reputable wholesale distributor out of Oakland, to bring a variety of fresh fruits & veggies into your home. This offering is as an add-on, and not a replacement for our $100-minimum seafood order. Click on the two new buttons.
  • A question that comes up often is “Is our fish Sashimi-grade?” The short answer is “Yes”. Seafood thawed from a Frozen state are great choices because the freezing process kills off any parasites and inhibits bacteria growth. There is actually a (never enforced) law or regulation that says “any fish consumed raw must have been frozen at some point in the process”. Also, Fresh seafood, if real fresh, is also a great choice — Many restaurants offer crudo, tartare, poke, raw-bars, etc., much of the offerings of which have never been frozen. (remember that never-enforced law?) Parasites are not an issue with Fresh farmed fish. Parasites that are detected in wild fish may be unappetizing to most (and may be part of the whole sushi experience to others (insert wink emoji)), and if the parasites that we commonly encounter are not detected, but rather ingested, know that they are not a health hazard. You didn’t go to the hospital when you found half-a-worm in your … apple, right? Bacteria growth is constant and inevitable, and eventually causing deterioration of the meat, especially surrounding the belly cavity. This is not fresh enough fish. Trust your nose.  Then it just comes down to personal taste — for me personally, I do not like raw, previously frozen Shrimp. Eeeew. I can’t imagine eating raw, farmed fresh Catfish, even though I love it fried, and Catfish has a very good shelf-life. And raw wild Swordfish wouldn’t ever be a high sashimi priority for me.
  • Back in da’ Freezer after a lengthy hiatus are Fries with Eyes, a.k.a IQF LAKE SMELT … rich, tasty little things; snap off the head (or not), dust ’em in flour, deep fry ’em like french fries, eat the bones, fins, head, all of it. Fingers & napkins are the only utensils required.
  • We carry a few brands of SMOKED SALMON, all are ‘nova style’ (Lox), all are sliced (cater-cut), all are about 3 to 4# per side. Easy to break down into smaller units for yer freezer, then thaw ’em when you need ’em.

  • We’ve got some Local Wild KING SALMON available — season ends on Thursday, we hope to land some more fish on Fri/Saturday, and that’ll be it until May-ish, 2021.  The fishermen will be gearing up for the start of Dungeness Crab season, typically mid-November, but it’s been a few years now of delayed openings, so we’ll see. Stay tuned to da’ “Tail”.
  • Here’s a few that don’t appear regularly in our inventory: Starry FLOUNDER Fil – local, close relative of PETRALE SOLE, and my favorite Sole/Flounder  /  ONO – tasty, firm-fleshed, almost SWORDFISH-like  /  BARRAMUNDI – we group this one in the “Bass” category, along with STRIPED BASS & WHITE C-BASS, etc., fattier/tastier than most “basses”  /  and FRESH SARDINES (see below)  /  TRY SOME!!

  • A discussion point that came up recently has to do with COOL (Country of Origin Labeling), which is meant to be informative, but in fact is very misunderstood, because it’s very misleading and not informative. A classic example is Frozen Alaskan Cod, which may caught by a Vietnamese fisherman on a Portuguese-flagged boat out of Vancouver, B.C. (Canada), fishing in Alaskan (USA) waters, and unloading the catch onto a Chinese-owned factory-at-sea ship, who then processes the fish that’s featured in your McFish sandwiches … and AK Cod is considered a “Product of China”. We know that the fish aren’t required to show their passport when swimming across borders, but there’s never been an AK Cod anywhere near China. But what if this fish (or any other) is labelled “Product of USA?” — That too is very uninformative, as the USA could mean AK or Hawaii or Maine or Florida or Texas or Calif — all different waters, all different ecosystems.

There are King Salmon being offered to us from Canada & AK, but those are now gill-netted river fish, which we tend to stay away from. Once Salmon have entered the rivers, on the way to their spawning grounds, the quality goes south. It’s just like Oysters and other seafood — when fish are in the mood for lovin’, they’re not so appetizing anymore. Unless you’re an Osprey or a Grizzly Bear.

  • TOMBO vs Albacore — they are both White Tuna, not Ahi, and they are the same species. When young, the fish known as Albacore follow the North Pacific/Japanese current, and this is the time of year when they pass by Calif & OR; small fish, delicate & soft meat, very fatty, definitely in the top three of my favorite-est fish! Then the fish get older, (and bigger, and firmer-fleshed), and also much wiser, so they decide to retire to the easy life of Hawaii/Fiji/South Pacific, they change their name to Tombo, and some of ’em end up as a center-of-the-plate entree at fine dining establishments, and not-so-lucky ones end up in a can labelled “white tuna” or “premium cat food”.
  • Another discussion point that came up recently has to do with COOL (Country of Origin Labeling), which is meant to be informative, but in fact is very misunderstood, because it’s very misleading and not informative. A classic example is Frozen Alaskan Cod, which may caught by a Vietnamese fisherman on a Portuguese-flagged boat out of Vancouver, B.C. (Canada), fishing in Alaskan (USA) waters, and unloading the catch onto a Chinese-owned factory-at-sea ship, who then processes the fish that’s featured in your McFish sandwiches … and AK Cod is considered a “Product of China”. We know that the fish aren’t required to show their passport when swimming across borders, but there’s never been an AK Cod anywhere near China. But what if this fish (or any other) is labelled “Product of USA?” — That too is very uninformative, as the USA could mean AK or Hawaii or Maine or Florida or Texas or Calif — all different waters, all different ecosystems.

Anybody know how to make an Octopus laugh? Why sure, you just give it “ten-tickles”.  And to all of you brand new readers, this is as good a time as any to opt out.
